Ingredients:

  • 4 slices of Silver Snapper fish
  • Salt and black pepper to taste
  • 1 teaspoon rosemary
  • 1 red onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 2 bay leaves
  • 1 Habanero pepper, finely chopped (adjust to taste for spice level)
  • 1 cup beer (pale ale or lager)
  • 2 tablespoons coconut milk powder
  • 2 tablespoons nutritional yeast
  • 2 tablespoons olive oil for searing

Instructions:

1. Marinate the Fish:

  • Pat the Silver Snapper fish slices dry with paper towels.
  • Season both sides with salt, black pepper, and rosemary.
  • Allow the fish to marinate for at least 15 minutes.

2. Prepare the Coconut Pepper Sauce:

  • In a bowl, mix together coconut milk powder, nutritional yeast, and a bit of water to form a smooth paste.
  • In a skillet, heat olive oil over medium heat.
  • Add sliced red onion, bell pepper, and onion. Sauté until softened.

3. Pan-Seared Silver Snapper:

  • In a separate skillet, heat olive oil over medium-high heat.
  • Carefully place the marinated Silver Snapper slices in the skillet.
  • Sear each side for 3-4 minutes or until the fish is cooked through and has a golden-brown crust.

4. Serve:

  • Place the pan-seared Silver Snapper on a serving plate.
